Chevy motor question?

i have a 1988 chevy k 1500 with the 350 in it right now but i plan on redoing the whole truck and turning it into a show truck i was wondering if i should buy a new 350 or put a 383 stroker in it which is a better motor because it wont get driven much but when it does it will be driven hard... and i want power and torque i just dont know which motor would be better for me to go with
